KAI Sekimagoroku Mokuren Gyuto 180mm Stainless Steel 3-Layer Clad

What is Sekimagoroku (Seki-Mago-Roku)
The origin of Seki-Kaji (Seki blacksmithing) dates back to the Kamakura period, when swordsmiths moved from Kyushu to what is now Seki City, Gifu Prefecture (Mino) and began forging swords in this region blessed with high-quality clay, water and charcoal. Many renowned blades were born here, and the master craftsman "Seki no Magoroku" (Seki-no-Magoroku) devised his own distinctive forging methods, producing supremely fine works of outstanding sharpness, beauty and artistry. As the times changed from the Edo to the Meiji era, many of Seki's swordsmiths turned to manufacturing household cutlery. The conviction behind the praise given to Seki swords - "they do not break, do not bend and cut exceptionally well" - has been firmly handed down to modern blade making. The "Sekimagoroku" series name comes from Magoroku Kaneko, the 27th-generation Kanemoto swordsmith, carrying that master's sharpness into the present day while keeping the artisan's techniques alive.

★Exceptional sharpness from edge finishing by skilled craftsmen
★Wet flat-front edge finishing: a very fine grinding wheel allows a delicate edge to be put on the blade. Because water is applied to the grinding wheel during the process, any drop in hardness from frictional heat is avoided.
★Stainless 3-layer clad steel: high-hardness stainless cutlery steel for the blade material and easy-to-sharpen stainless material for the cladding deliver both keen cutting performance and easy sharpening.
★Welded bolster: with no seam, moisture and dirt are less likely to collect - a hygienic specification.
★Laminated reinforced wood handle with an excellent fit, in a full-tang specification with good weight balance.
★After use, promptly remove dirt and moisture and dry the knife. Leaving dirt or moisture on it can cause rust and discoloration.

*This knife can be used by both right-handed and left-handed users. Left-handed users can also use it.
*Not suitable for use in a dishwasher.

■Handle
Made of laminated reinforced wood, which has a premium feel and excellent strength. Its rounded shape also provides an excellent fit. Highly durable, with a full-tang specification and good weight balance that reduces fatigue even during long periods of use.
■Bolster
The bolster joining the blade and the handle is welded and then polished, creating a welded bolster where moisture and dirt are less likely to collect.
■Blade
High-carbon stainless cutlery steel is used as the blade material, delivering keen sharpness and long-lasting cutting performance. Stainless 3-layer clad steel that is easy to re-sharpen.■Edge finishing
A very fine grinding wheel can be used to put the edge on the blade, achieving a delicate cutting performance. Since any drop in hardness due to heat is also avoided, the edge can be finished while maintaining high hardness.
