■ Product Details
The Essential Kiritsuke 4-inch (120mm) is a nimble knife ideal for fine work such as peeling and thinly slicing vegetables.
Its size is also handy for preparing small quantities of ingredients.

What is Sekimagoroku (Seki-Mago-Roku)
The origin of Seki-Kaji (Seki forging) dates back to the Kamakura period, when swordsmiths moved from Kyushu to what is now Seki City, Gifu Prefecture (Mino) and began making swords in this region blessed with high-quality clay, water and charcoal. Many famous blades were produced there, and the master craftsman "Seki-no-Magoroku" devised a distinctive sword-making method, delivering to the world supreme blades of beauty, high artistry and outstanding sharpness. As the era shifted from Edo to Meiji, many of Seki's swordsmiths turned to manufacturing household cutlery. The conviction behind Seki swords, praised as "blades that do not break, do not bend, and cut extremely well", has been faithfully passed down to today's cutlery making. The "Sekimagoroku" series name comes from the 27th-generation Kanemoto, swordsmith Mr. Magoroku Kaneko, bringing that sharpness into the modern day while making the most of the master's skills.

※ Not suitable for use in a dishwasher or drying machine.

[Caring for your knife] After use, apply a neutral detergent to a sponge, remove any dirt, then rinse, wipe off moisture thoroughly with a dry cloth and store in a place with low humidity.

[Re-sharpening your knife] No matter how fine a blade is, it will gradually deteriorate unless it is properly maintained at the right time. When a ripe tomato gets crushed instead of sliced, or chicken slips and will not cut cleanly, it is a sign that re-sharpening is needed.
So that you can use your KAI knife with confidence for many years, KAI also offers a professional re-sharpening service (for a fee) — please contact our store for details. (Other manufacturers' products cannot be accepted.)
