KAI Sekimagoroku Damascus Small Santoku 145mm Stainless Clad Composite Material

Damascus
Like a quiet temper pattern on a blade, yet also like unwavering tree rings.
The magnificent Damascus pattern, reminiscent of a Japanese sword, is the crystallization of the craft of folding 32 different layers together.
The handle adopts a tough, rivetless construction.
This is the premium series of "Sekimagoroku", in which the pride of the swordsmith lives on.

What is Sekimagoroku (Seki-Mago-Roku)
The origin of Seki-Kaji (Seki forging) dates back to the Kamakura period, when swordsmiths moved from Kyushu to what is now Seki City, Gifu Prefecture (Mino) and began making swords in this region blessed with high-quality clay, water and charcoal. Many famous blades were born here, and the master smith "Seki-no-Magoroku" devised a distinctive method of sword making, bringing to the world the finest masterpieces: beautiful, highly artistic and outstandingly sharp. As the times changed from the Edo to the Meiji era, many of Seki's master smiths turned to manufacturing household cutlery. The conviction behind the praise that Seki swords "do not break, do not bend, and cut extremely well" has been firmly handed down to modern blade making. The "Sekimagoroku" series name comes from the 27th-generation Kanemoto, master smith Magoroku Kaneko, and conveys that sharpness to the present day while making full use of the master's techniques.

★A premium Japanese-design line that meets even professional needs!! A beautiful Damascus pattern reminiscent of a Japanese sword spreads across the blade surface, while the handle has an inverted triangular shape that fits the hand just right. Sharpness, comfort in use and design — functional beauty pursued to the fullest.
★Meticulously specified "authentic edge finishing" — newly developed "suki" (hollow grinding) and edge-setting techniques are used in the finish to achieve a keen cutting edge. The integrated bolster, with the stainless steel bolster welded to the blade, completely shuts out moisture and rust.
★A "laminated reinforced wood handle" with an excellent fit. The handle material is natural wood given a special treatment. It retains the natural texture of wood while offering high strength and resistance to water and humidity.
※This knife can be used by both right-handed and left-handed users. Left-handed users can also use it.
※Not suitable for use in a dishwasher or dish dryer.

■Handle
A laminated reinforced wood handle with an excellent fit. The inverted triangular shape and rivetless shaft construction provide outstanding strength and water resistance while also pursuing attractive design.
■Bolster
The bolster joining the blade and handle is welded and polished, creating a welded bolster where moisture and dirt do not easily collect.
■Blade
The "Damascus pattern" is created by folding different stainless steels into 32 layers. In addition to excellent sharpness, it delivers lasting edge retention and easy sharpening.
■
Edge setting
The edge can be set with an extremely fine grinding wheel, achieving a delicate cutting performance. Because any drop in hardness caused by heat is also avoided, the edge can be set while maintaining high hardness.

[Caring for your knife] After use, apply a neutral detergent to a sponge, remove any dirt, rinse, wipe off the moisture thoroughly with a dry cloth, and store in a place with low humidity.

[Re-sharpening your knife] No matter how good a blade is, it will gradually deteriorate unless proper maintenance is carried out at the right time. When a fully ripened tomato gets crushed as you cut it, or when chicken slips and will not cut properly, it is a sign that re-sharpening is needed.
So that you can use your KAI knife with confidence for many years, a re-sharpening service (fee required) by KAI professionals is also available — please contact our store. (Products from other makers cannot be accepted.)
