KAI Seki Magoroku Damascus Gyuto 210mm Stainless Clad Composite

Damascus
Like a quiet blade pattern, yet also like unwavering tree rings.
The magnificent Damascus pattern, reminiscent of a Japanese sword, is the crystallization of a technique that folds 32 different layers together.
The handle adopts a tough construction that uses no rivets.
This is the premium "Seki Magoroku" series, in which the pride of the swordsmith lives on.

What is Seki Magoroku (Seki-Mago-Roku)
The origin of Seki-Kaji dates back to the Kamakura period, when swordsmiths who had moved from Kyushu to what is now Seki City, Gifu Prefecture (Mino) began making swords in this region blessed with fine clay, water and charcoal. Many famous swords were born here, and the master craftsman "Seki no Magoroku" (Seki-no-Magoroku) devised a distinctive method of sword making, delivering to the world the finest blades of outstanding sharpness, beauty and artistry. As the times changed from Edo to Meiji, many of Seki's swordsmiths turned to manufacturing household cutlery. The conviction behind the praise that Seki swords "do not break, do not bend and cut well" has been firmly handed down to modern blade making. The "Seki Magoroku" series name comes from the 27th generation Kanemoto, swordsmith Mr. Magoroku Kaneko, and conveys that sharpness to the present day while making the most of the master's skills.

★A Japan-designed premium line that meets even professional needs!! A beautiful Damascus pattern reminiscent of a Japanese sword spreads across the blade surface, while the handle has an inverted triangular shape that fits comfortably in the hand. Sharpness, comfort in use and design — functional beauty pursued to the fullest.
★"Authentic blade finishing" with meticulous specifications. Newly developed "hollow grinding" and "edge finishing" technologies deliver razor-sharp cutting performance. The one-piece bolster — the stainless ferrule welded to the blade — completely shuts out moisture and rust.
★A "laminated reinforced wood handle" with an excellent fit. The handle material is natural wood given a special treatment. It retains the natural texture of wood while offering high strength and resistance to water and humidity.
*This knife is suitable for both right-handed and left-handed users. Left-handed users can also use it.
*Not suitable for use in a dishwasher.

■Handle
A laminated reinforced wood handle with an excellent fit. The inverted triangular shape and the rivet-free shaft construction provide outstanding strength and water resistance, with design appeal pursued as well.
■Bolster
The ferrule joining the blade and the handle is welded and polished, creating a welded bolster where moisture and dirt do not easily collect.
■Blade
The "Damascus pattern" is created by folding 32 layers of different stainless steels together. In addition to excellent sharpness, it delivers lasting edge retention and easy sharpening.
■
Edge finishing
Finishing with an extremely fine grinding wheel is possible, achieving a delicate cutting edge. Since hardness loss due to heat can also be avoided, the edge can be finished while maintaining high hardness.

[Caring for your knife] After use, apply a neutral detergent to a sponge, remove any soiling, rinse, wipe off moisture thoroughly with a dry cloth, and store in a place with low humidity.

[About re-sharpening your knife] No matter how good a blade is, it will gradually deteriorate unless proper maintenance is carried out at the right time. When a fully ripe tomato gets crushed as you cut it, or chicken slips and cannot be cut cleanly, it is a sign that re-sharpening is needed.
So that you can use your KAI knife with confidence for many years, KAI also offers a professional re-sharpening service (for a fee) — please contact our store for details. (Other manufacturers' products cannot be accepted)
