KAI Sekimagoroku Damascus Santoku 165mm Stainless Clad Composite

Damascus
Like a quiet blade pattern, yet also like unwavering tree rings.
The magnificent Damascus pattern, reminiscent of a Japanese sword, is the crystallization of the technique of folding 32 different layers together.
The handle employs a robust construction that uses no rivets.
This is the premium series of "Sekimagoroku," in which the pride of the swordsmith lives on.

What is Sekimagoroku (Seki-Mago-Roku)
The origin of Seki-Kaji (Seki forging) dates back to the Kamakura period, when swordsmiths moved from Kyushu to what is now Seki City, Gifu Prefecture (Mino) and began making swords in this region blessed with high-quality clay, water and charcoal. Many famous blades were born here, and the master craftsman "Seki no Magoroku" (Seki-no-Magoroku) devised a distinctive method of swordmaking, producing beautiful, highly artistic masterpieces with outstanding sharpness. As the times changed from the Edo to the Meiji era, many of Seki's master swordsmiths turned to manufacturing household cutlery. The conviction for which Seki swords were praised—"they do not break, do not bend, and cut well"—has been firmly handed down to modern blade making as well. The "Sekimagoroku" series name was granted by the 27th-generation Kanemoto, master swordsmith Magoroku Kaneko, and it conveys that sharpness to the present day while keeping the artisan's skills alive.

★A premium Japanese-design line that meets even professional needs!! A beautiful Damascus pattern reminiscent of a Japanese sword spreads across the blade surface, while the handle has an inverted triangular shape that fits the hand just right. Functional beauty has been pursued in sharpness, comfort of use and design.
★Meticulous "authentic blade grinding" finish. Newly developed "thinning" and "edge grinding" techniques are employed to achieve keen sharpness. With the integrated bolster, the stainless bolster and the blade are welded together to completely shut out moisture and rust.
★A snug-fitting "laminated reinforced wood handle." The handle material is natural wood given a special treatment. It retains the natural texture of wood while offering high strength and resistance to water and humidity.
*This knife is for both right- and left-handed use. Left-handed users can use it as well.
*Not suitable for use in a dishwasher.

■Handle
A snug-fitting laminated reinforced wood handle. The inverted triangular shape and the riveted-free shaft construction provide excellent strength and water resistance while also pursuing attractive design.
■Bolster
The bolster joining the blade and the handle is welded and polished, creating a welded bolster where moisture and dirt do not easily accumulate.
■Blade
The "Damascus pattern" is created by folding 32 layers of different stainless steels together. In addition to excellent sharpness, it delivers lasting edge retention and easy sharpening.
■
Edge grinding
An extremely fine grinding wheel can be used for sharpening, achieving a delicate cutting edge. Because a drop in hardness due to heat can also be avoided, the edge can be ground while maintaining high hardness.

[Care of your knife] After use, apply a neutral detergent to a sponge, remove any dirt, then rinse, wipe off the moisture thoroughly with a dry cloth, and store in a place with low humidity.

[Re-sharpening your knife] No matter how good a blade is, it will gradually deteriorate unless proper maintenance is carried out at the right time. When a ripe tomato gets crushed instead of sliced, or when chicken slips and cannot be cut neatly, it is a sign that re-sharpening is needed.
So that you can use your KAI knife with confidence for many years, a re-sharpening service by KAI professionals (fee-based) is also available—please contact our store. (Other manufacturers' products cannot be accepted.)
